GF (Gluten-Free) Recipes Using Cheap Foods: Look Ma--No Grains!

Grain-Free Brownies (makes 9-12 brownies, depending on how you cut them)
2 c. cooked black beans
3 lightly beaten eggs
1/3 c. melted butter or coconut oil
1/4 c. cocoa powder
2 t. vanilla
1/4 c. honey or equivalent sweetener
1/2 c. choc. chips
1/3 c. chopped walnuts (optional)

*Make these your own brownies by using another type of cooked bean or pea, a different flavored chip besides chocolate, and/or different nut type. Experiment, or just use what ya' got!

Preheat oven to 350 degrees and grease an 8 X 8" square pan. Toss all but the final two ingredients into a blender or food processor, and blend until smooth (or you could just stir the hell out of it). Fold in the choc. chips and nuts. Pour batter into greased pan and bake for about 30 mins.

Flourless Peanut Butter Cookies (makes 10-12 cookies)
1 c. creamy peanut butter
1 c. white sugar + 1 c. for rolling
1 t. baking powder
1 egg

Preheat oven to 350. Line a baking sheet with parchment paper. Cream the peanut butter and sugar in a bowl. Beat in the baking powder. Add egg. Mix until it is well-combined--the dough will be sticky, so be prepared to get your hands messy.

Roll a small amount of dough into a ball, then roll ball in white sugar. Place onto parchment paper and bake for about 10 mins. Cookies will still feel a little soft--let cookies rest out of the oven for about 5 mins. Afterward, carefully transfer them to a cooling rack. After about 10 mins. of rack cooling, they will have hardened and will be glistening with sugar.
